Caramel Apple Cake and Crafts

Before you do anything else, you should make this recipe. I made it twice last weekend. We had two dinners with friends and I brought dessert both times. It’s easy and everyone loves it. I’m not a cake lover and I even love this. Is it healthy for your body? No, it’s full of sugar. Is it good for your soul? Yes, yes it is.

Caramel Apple Cake

Ingredients:
2 cans apple pie filling
1/2- 3/4 cup caramel sauce or dip
1/4 tsp cinnamon
1/4 tsp nutmeg
1 box yellow cake mix
1/2 – 3/4 cup butter sliced into small squares
1/2 cup pecans

Directions:
Preheat oven to 350 degrees. Spread the pie filling on the bottom of a 9×13 pan. Drizzle caramel sauce evenly on top. Sprinkle cinnamon and nutmeg over caramel apple mixture. Sprinkle the cake mix evenly on top. Cut butter into squares and place on top of cake mix making sure there are not too much space between. Sprinkle or place the pecans on top. Bake for 50 mins at 350. Serve warm or cool. I’ve been told it goes great with ice cream!

Since Labor Day is over, it’s basically fall. Although the fashion bloggers have been “feeling fall vibes” since August 1st. Starbucks released their pumpkin spiced latte on August 24 and Instagram went crazy. Anyhow, while I was cleaning my house I decided to pull out the fall décor. I don’t go too crazy but I change it up with the seasons. This year, I wanted some gold pumpkins. Guess what I couldn’t find anywhere? Gold freaking pumpkins. I had to improvise and make my own. I HATE crafts. I don’t have the patience to sit still that long and I’m not creative enough. Luckily, this was easy. I bought two craft pumpkins at Walmart and Hobby Lobby and spray painted them with Rustoleum paint. Super simple. They’re definitely not perfect but they were cheap and they look good. Who knows? Maybe I’ll do more. Maybe.

Along with the baking and doing crafts, the past few weekends have been great. I avoided the news as much as possible since it just stresses me out and I end up yelling at the television. I also logged off Facebook for most of the weekend. Facebook is a dumpster fire of people’s opinions on how others should live their lives. I nearly lost it when someone made the comment that I shouldn’t have gotten the vaccine without doing research. My research was calling up my cardiologist at the Mayo Clinic and talking to her about it. If you have more credentials than her (And I seriously doubt anyone does), then perhaps I’ll listen to your opinion. If you are not a Mayo Clinic cardiologist, your opinion means nothing to me. Get the vaccine, don’t get the vaccine…do whatever you want. Just quit using Google as your research and quit shaming others for their choices. M’kay pumpkin?

On a good note, I got to do something really fun the last weekend in August. A friend of mine organized a Ladies Mystery Day for a bunch of us in the neighborhood. We all met at noon on a Saturday and had no idea what we were doing. We went to Fassler Hall for lunch then did a Puzzling Adventures Scavenger Hunt around Little Rock. Since you can stop the timer, we also stopped for snacks and drinks. It was a great day hanging out with some good friends and getting to know a lot of other great women. When we first moved here, I worried about meeting people. Luckily, we just moved into a subdivision with a bunch of fun people. Three of them even live on the same street as us! No wonder we never leave campus (our subdivision)!

So other than caramel apple cake, fall decorating, and football, what else is going on? Ulta is having their 21 Days of Beauty and the deals look pretty good. I ordered Benefit Hoola Bronzer for $15 (normally $30). Just make sure to check as some of the deals are online only. The shipping was super fast as well. I ordered on a Monday and it was here on Thursday. I also ordered from Old Navy on a Monday and received my stuff on Friday. That’s really fast for them as they normally take nearly two weeks. I’ve decided to join 2021 and get some joggers. I put this off forever then finally bought a pair. Then I bought two more pairs last week. I really love the Cedarwood color for fall and now I think I want them in the Canyon color too. I’m working two days a week at home so I’m able to wear them pretty often. I’m all about wearing elastic waisted pants these days. Especially if I want to keep eating caramel apple cake.
