Football and Food….

So Friday night, I posted a blog and wondered if I’d miss the snow. Well, Mother Nature must have heard because Sibley got snow! According to a friend, they already have 3 inches on the ground with more coming. This is uncharacteristically early for that much snow in northwest Iowa and it will probably be melted within a few days.

Here in Arkansas, it’s 61 degrees and cloudy. Yesterday it rained all day but we managed to get out a little bit. We spent the afternoon exploring in Little Rock. Because of the rain, we didn’t go downtown to explore like we had planned. We went to a JcPenney and Old Navy in Little Rock (we like cheap clothing!) and exchanged some clothing. Then we went to BJ’s Brewhouse for a quick drink and a snack. I had the Pumpkin Ale. I think the whole pumpkin spice thing is getting a little out of hand but I love the smell and being a basic girl, I had to try it. It wasn’t bad! We also split an order of their Mandarin Orange Wings. I was very surprised how much I liked these. They didn’t seem as heavy as some wings. Delicious! Later we went to Saltgrass Steakhouse in Sherwood and had some steak. I ate way too much ( and spent too much!) but not every weekend will be like that. One of my favorite things is trying new restaurants and seeing new places so it’s been fun to explore our new home. I’m trying to convince James to go to Whole Foods soon. I don’t think he appreciates Whole Foods as much as I do.

Right now, he’s watching the Vikings play. Since we have Sunday Ticket, we can watch any game. He changed it to the Raiders vs. Seahawks and I just told him to switch it back. The Raiders are NOT looking good this year. I had some hopes for them since Gruden was coming back but … yeah…he got rid of Khalil Mack then complained how hard it is to find a good pass rusher. WTH? You got rid of the best in the league! Hope the Chicago Bears are enjoying this because I sure as hell am not. Now the rumor is they are talking about trading off Amari Cooper. Again, WTH? Cooper is a great receiver. Let’s get rid of everyone is who good and then see how far we can fall. They have talent, they just need to get it together. And now Cooper is being evaluated for a concussion…

Speaking of football, Iowa State beat No. 6 West Virginia yesterday!  We didn’t get to see the game as we were out and about but my sports updates were blowing my phone up. ISU has officially declared this month “Brocktober”. I love it! Watching a true freshman throw the way he does is so inspiring. And their defense has kicked some major booty lately. I swear ISU has done this the past few years- they spend the first few games not looking good then explode in October. Whatever. Just keep playing that way and don’t get rid of Matt Campbell. I love Iowa State so much. Don’t even ask me how many times I’ve watched Seneca Wallace’s “The Run” on YouTube. I know it happened in 2002, but I still love it.

Anyhow, since it’s football day, we decided to make Buffalo Chicken Chili. Actually, I’ve been told this isn’t chili since there are no beans but add some if you want to.

Buffalo Chicken Chili

Ingredients:
1 pound chicken breasts
1 can diced tomatoes
1-2 small onions, chopped
3-4 stalks of celery chopped
1 can sliced carrots, drained
1 cup chicken broth (more if you need it!)
1 tsp paprika
1/2 tsp oregeno
1/2 tsp garlic powder
1/4-1/2 cup hot sauce (just do this to taste)
salt and pepper to taste

Optional ingredients:
1 cup beer
Blue Cheese
Tortilla Chips
Cayenne pepper

Dice the onion and celery. Add the chicken and the rest of the ingredients to the crock pot and stir it. Cook on low for 6-8 hours. If you want it to be done faster, cook the onions and celery prior to adding to the crockpot. (Some notes: add the hot sauce slowly as you can always add more if needed. I use Frank’s Hot Sauce because I don’t like the sauces will all the artificial junk in them. )  Shred the chicken and serve with tortilla chips and blue cheese crumbles.

Seriously, this is a great recipe. I found it on Pinterest a few years ago and we make it at least once a week in the fall and winter. The leftovers are awesome. I’ve even eaten this for breakfast. We’ve taken this to several gatherings and it always goes fast.

What else has happened? Oh, we got a washer and dryer! That’s how I know I’m an adult. I was over the moon happy to do laundry today. I didn’t want to go to the laundromat again. That’s way to boring for my Type A personality.

Right now, Deuce is obsessed with chasing a fly that is on the outside of the window. He seems to be adjusting a little better today. Probably because we’ve been home and James has been taking him on walks. Hopefully, he gets a little less anxious about everything by the time I find a job. I may actually bring him to a doggy day care just so he has someone to play with instead of being alone all day….

Ok, everyone. Go get some Buffalo Chicken Chili going and make it a relaxing Sunday…

    Chili sounds amazing! Do you add the beer? If so, which beer do you use? My chicken Chipotle Chili I make often recommends a Mexican beer. I usually use Corona.

    1. I usually do just for some flavor. I just use Bud Light or whatever James happens to have in the house!
